Biography:

Sarah Stapleton is an academic expert in school food systems, climate education and environmental education in K–12 schools. A former middle and high school teacher, her research examines how schools address environmental issues through curriculum, food systems and community partnerships. She studies topics such as school meals, farm-to-school programs, school gardens and food insecurity, as well as how climate change is taught in classrooms. Her work also focuses on environmental justice education and participatory research approaches that engage teachers and students in addressing environmental challenges.
