New dining spot opens in Knight Campus 2 building

“Hi, I’m going to have the Gouda Morning brioche sandwich and a large cold brew.”

“And I’ll order the creamy burrata with roasted tomatoes, a green tea and a Duck cookie.”

This could be you and your best friend at work taking a break at the Riverfront Bistro located in the Knight Campus Building 2 along the Eugene Millrace.

The new café opened April 20 and operates Monday to Friday from 7:30 a.m. to 4 p.m. It is designed to be a flexible, comfortable space for students, employees and campus visitors alike.

Some of the other fresh, modern and locally inspired offerings include breakfast sandwiches with avocado or tempeh, shareable plates of fried Castelvetrano olives or salami and cheese, and fresh salads that can be topped with Pacific Northwest steelhead or crispy chicken. There is a full lineup of certified organic espresso beverages, cold brew, tea and specialty drinks.

“Riverfront Bistro is my canvas right now, and I’m thrilled to share what we’ve been working on," Chef Dan Irvin said. “I invite everyone on campus to come taste our newest creations and see what’s inspiring us this season.”
